Cookie Monster Cheesecake

  • 3 cups cookie choco chips, for the crust
  • 1/2 cups butter, melted, for the crust
  • 3 cups cream cheese, in cubes
  • 1 cup condensed milk
  • 1/2 cups whipping cream
  • 1/2 cups Jumex® Unique Fresh Orange
  • blue food coloring
  • 28 grams unflavored gelatin powder, hydrated and melted, 7 g per packet
  • mini choco chip cookie, for decoration
  • milk chocolate, chopped, for decoration
  • white fondant, for decoration
  • black fondant, for decoration

  • For the crust: Place the chocolate chip cookies in a plastic bag and crush them using a rolling pin. Transfer the crushed cookies to a bowl and mix with the melted butter until combined.
  • Line the base of a rectangular tart ring with cling film and place acetate sheets on the sides of the ring. Pour the cookie crust mixture and press down to compact the entire surface with the help of a glass until it is even. Refrigerate until the mixture is solid.
  • Soften the cream cheese using a hand mixer with a whisk attachment, then add the condensed milk, heavy cream, and Jumex® Único Fresco orange juice, mixing until combined. Add blue food coloring until the desired shade is achieved. Gradually add the melted gelatin and finish integrating.
  • Pour the blue cheese mixture over the cookie crust, place mini chocolate chip cookies and milk chocolate cookies all over the surface. Refrigerate for 1 hour or until the mixture is solid.
  • Unmold the cheesecake and cut into small rectangular pieces. Form eyes using white and black fondant, placing them near the cookies to simulate a smile. Serve well chilled.
