Delicious cornstarch alfajores dessert for special occasions. Alfajores are a typical dessert from Argentina made like a sweet sandwich filled with dulce de leche. You can serve them as a dessert or even as a gift.
Sift the flour, cornstarch, baking soda, and baking powder.
In a bowl, beat the butter with the sugar, add the egg yolks one at a time mixing well each time, then the cognac; and gradually add the sifted dry ingredients. Incorporate the vanilla essence or lemon zest and mix well.
Form a dough without kneading and roll out to ½ cm thick. Cut out medallions of 4 cm in diameter.
Place on an ungreased baking sheet and bake in a moderate oven for 15 minutes; let cool.
Form the alfajores by joining two cookies with dulce de leche in the middle and rolling their edges in shredded coconut.
