Cornstarch Alfajores

Delicious cornstarch alfajores dessert for special occasions. Alfajores are a typical dessert from Argentina made like a sweet sandwich filled with dulce de leche. You can serve them as a dessert or even as a gift.

  • 200 grams wheat flour
  • 300 grams cornstarch, cornstarch
  • 1/2 teaspoons baking soda
  • 2 teaspoons baking powder
  • 200 grams butter
  • 150 grams sugar
  • 3 eggs
  • 1 teaspoon lime zest
  • 500 grams dulce de leche, or cajeta
  • 1 cup cognac

  • Sift the flour, cornstarch, baking soda, and baking powder.
  • In a bowl, beat the butter with the sugar, add the egg yolks one at a time mixing well each time, then the cognac; and gradually add the sifted dry ingredients. Incorporate the vanilla essence or lemon zest and mix well.
  • Form a dough without kneading and roll out to ½ cm thick. Cut out medallions of 4 cm in diameter.
  • Place on an ungreased baking sheet and bake in a moderate oven for 15 minutes; let cool.
  • Form the alfajores by joining two cookies with dulce de leche in the middle and rolling their edges in shredded coconut.
