Cornstarch alfajores

Rich tasting dessert alfajores made with cornstarch for special occasions. The alfajores are a typical Argentine dessert made like a sweet sandwich with a caramel like filling. You can serve them as dessert or even as a gift.

  • 200 grams wheat flour
  • 300 grams cornstarch, cornstarch
  • 1/2 teaspoons baking soda
  • 2 teaspoons baking powder
  • 200 grams butter
  • 150 grams sugar
  • 3 eggs
  • 1 teaspoon lime zest
  • 500 grams dulce de leche, or cajeta
  • 1 cup cognac

  • Sift flour, cornstarch, baking soda and baking powder.
  • In a bowl beat the butter with the sugar, add the yolks one by one mixing well after each one, then the cognac; and little by little the sieved dry ingredients. Add the vanilla essence or the lemon zest and mix well.
  • Form a dough without kneading and stretching ½ cm. of thickness. Cut medallions of 4 cm. diameter.
  • Place on a plate without greasing and cook in medium temp oven during 15 minutes; let cool.
  • Form the alfajores by joining two cookies with caramel in the middle and passing their edges through grated coconut.
