  • 6 egg yolks
  • 1 cup clotted cream
  • 1 tablespoon vegetable shortening
  • 6 egg whites
  • flour
  • vegetable oil, to fry the torrijas
  • 1 egg white
  • 1/2 cups water
  • 1 kilo sugar
  • water, fry
  • 1 tablespoon orange peels
  • 2 cloves
  • 1 teaspoon anise

  • Mix the egg yolks and cream with a whisk.Melt the lard in a pan over medium-low heat, add the yolk mixture, cover, and cook on low heat for 10 minutes or until fully cooked, but do not let it burn. Remove from heat and let cool. Cut into medium cubes and set aside.
  • Beat the egg whites to a stiff peak or until they double in size and are firm. Dip the torrijas in flour and then in the whipped egg whites.
  • Fry the torrijas in a pot with enough oil over medium heat. Remove from the oil and place on a plate with absorbent paper.
  • For the syrup: in a bowl, mix the egg whites with water using a whisk for 4 minutes. When it foams a little, add it to a pot along with the sugar; this needs to rise in the pot three times, as it means it will rise like foam, and when this happens, add cold water to bring it back down.When the mixture rises for the third time, remove the foam with a ladle. Add the orange peel, clove, and anise and reheat for 5 minutes on very low heat. If necessary, remove the foam again, strain, and set aside. Remember that the syrup should be at the gum point.
  • Serve the cream torrijas on a flat plate and drizzle with the syrup.
