Creamy Corn Gelatin

You can’t imagine the delight of this creamy corn gelatin; its flavor will surprise everyone. It’s perfect for celebrating Mexican parties and is a great idea to include as a sellable dessert. Enjoy it with sweetened condensed milk to taste; we assure you that the whole family will love it.

  • 2 cups yellow corn, canned and drained
  • 1/2 cups whole milk, 125 ml
  • 1 cup cream cheese, in cubes, 190 g
  • 1 cup evaporated milk, 250 ml
  • 1/2 cups condensed milk, 125 ml
  • 1 teaspoon vanilla essence
  • 1 teaspoon cinnamon powder
  • 21 grams unflavored gelatin powder, hydrated, 3 packets (7 g each)
  • cooking spray, for greasing
  • condensed milk, to accompany
  • obleas, pink and yellow, chopped, for decoration
  • pecans, chopped, for decoration

  • Blend the yellow corn kernels with whole milk, cream cheese, evaporated milk, sweetened condensed milk, vanilla extract, and cinnamon until fully integrated. While continuing to blend at low speed, open the lid and pour in the hydrated gelatin in a steady stream, cover, and blend for 2 more minutes until integrated.
  • Grease a 21 cm diameter gelatin mold with cooking spray. Pour the mixture until covered and refrigerate until set. We recommend doing this overnight.
  • Unmold the gelatin, place it on a serving platter, drizzle with sweetened condensed milk, and decorate with wafers and pecans. Your gelatin is ready to share.
