2 avocados, medium peeled and pureed avocados for the frosting
250 grams icing sugar, for the frosting

In a bowl, mix the flour, cocoa powder, salt, baking powder, and baking soda.
In another large bowl, beat the sugar, applesauce, avocado puree, water, vinegar, and vanilla until well combined.
Finally, mix all the dry ingredients with all the wet ingredients at once and beat with a whisk (by hand) until smooth.
Pour the mixture into cupcake molds and bake for 18 to 22 minutes, or until a toothpick inserted comes out clean. Let the cupcakes cool completely before adding the avocado frosting.
For the frosting
Peel and chop the avocados, scraping the contents into a medium bowl. If the avocados have brown spots, avoid them when scooping the flesh into the bowl.
Add the lemon juice and beat the avocados with a mixer on medium speed until the avocados have a light consistency and a smooth texture color, about 2-3 minutes.
Gradually add the powdered sugar, and finally add the vanilla extract until well integrated.
