Preheat the oven to 180° Mix the margarine with the sugar. Add the vanilla. It is not necessary to wait for the sugar to dissolve; we just want to combine these three ingredients.
Add the eggs and the yolk one by one.
Combine the dry ingredients and add them alternately with the cream to the previous mixture.
Place the mixture in a piping bag or, using a spoon, fill the cupcake liners up to 3/4 of their capacity.
Bake in cupcake molds for about 20 min. or until a toothpick inserted comes out clean. Let cool before decorating.
White Chocolate Topping: In a pot, bring the cream to a boil and pour it over finely chopped chocolate. Refrigerate and then whip at high speed until it reaches a chantilly point.
Decorate the cupcakes and enjoy this delicious treat!!
