Enjoy the football matches of this season and prepare these delicious vanilla cupcakes, decorated with a rich cream cheese frosting, in the colors of Cruz Azul.
Preheat the oven to 180 degrees Celsius. Prepare two cupcake trays with blue cupcake liners.
Mix the flour, baking powder, and salt.
In an electric mixer, beat the butter and sugar until fluffy. Add the eggs and vanilla and mix well.
Add the flour mixture and milk and beat until you have a smooth batter.
Pour the batter into the liners and bake for 20 minutes. Remove from the oven and let them cool.
While the cupcakes are baking, make the frosting by beating cream cheese, powdered sugar, butter, and vanilla extract in an electric mixer.
Divide the frosting into two equal parts and add 1 drop of blue food coloring to one and 1 drop of red food coloring to the other (be careful as the food coloring is very potent; you can add it drop by drop until you achieve the desired color) and finish mixing.
Once the cupcakes and frosting are ready, decorate the cupcakes with the frosting; you can use a piping bag and a small tip for better presentation.
