Cruz Azul Cupcakes

Enjoy the football matches of this season and prepare these delicious vanilla cupcakes, decorated with a rich cream cheese frosting, in the colors of Cruz Azul.

  • 4 1/2 cups flour
  • 2 1/4 tablespoons baking powder
  • 1 1/4 tablespoons salt
  • 2 1/4 sticks unsalted butter, at room temperature
  • 6 eggs
  • 1 tablespoon vanilla essence
  • 1 1/4 cups cow's milk
  • 1 package cream cheese, for the frosting
  • 1/2 cups unsalted butter, for the frosting
  • 1 cup icing sugar, for the frosting
  • 1 tablespoon vanilla essence, for the frosting

  • Preheat the oven to 180 degrees Celsius. Prepare two cupcake trays with blue cupcake liners.
  • Mix the flour, baking powder, and salt.
  • In an electric mixer, beat the butter and sugar until fluffy. Add the eggs and vanilla and mix well.
  • Add the flour mixture and milk and beat until you have a smooth batter.
  • Pour the batter into the liners and bake for 20 minutes. Remove from the oven and let them cool.
  • While the cupcakes are baking, make the frosting by beating cream cheese, powdered sugar, butter, and vanilla extract in an electric mixer.
  • Divide the frosting into two equal parts and add 1 drop of blue food coloring to one and 1 drop of red food coloring to the other (be careful as the food coloring is very potent; you can add it drop by drop until you achieve the desired color) and finish mixing.
  • Once the cupcakes and frosting are ready, decorate the cupcakes with the frosting; you can use a piping bag and a small tip for better presentation.
