Cupcakes Oatmeal Cookies Chunk

Delicious cupcakes inspired by my favorite Ben and Jerry's ice cream.

  • 100 grams flour , with baking powder
  • 325 grams unsalted butter
  • 125 grams brown sugar
  • 70 grams oat cereal
  • 60 grams chocolate chip cookie, miniatures
  • 3 teaspoons cinnamon, in paste
  • 3 tablespoons cow's milk
  • 2 tablespoons water
  • 3 eggs
  • pumpkin seeds, chocolate (to taste)
  • 300 grams powdered sugar
  • 12 chocolate chip cookie, miniature for decoration

  • We mix the brown sugar with 125 grams of butter (at room temperature).
  • We add the eggs, one by one (it’s better if they are out of the fridge).
  • We add a teaspoon of cinnamon paste.
  • We crush the oats and cookies.
  • We add to the mixture the sifted flour, oats, and crushed cookies (also sifted).
  • We mix all the ingredients and add the chocolate chips.
  • We distribute the batter into cupcake molds (do not fill more than halfway).
  • We put the tray in the preheated oven at 180º for about 15-20 minutes and it's ready. Let them cool while we prepare the cinnamon cream.
  • We mix 300 grams of powdered sugar with 200 grams of butter, 2 tablespoons of cinnamon paste, and 2 tablespoons of water.
  • We beat everything very well, and when the batter has shine and consistency, we put it in a pastry bag to decorate our cupcakes.
  • To finish the decoration, place a cookie, a piece of chocolate, and a cinnamon stick on each cupcake.
