Apple Cupcakes Filled with Jam

  • 1 cup apple cider
  • 1 cup cream cheese, for the frosting
  • 1/2 cups unsalted butter, for the frosting

  • 1/2 teaspoons cinnamon, for the frosting
  • 3 1/2 cups icing sugar, for the frosting
  • 1/2 teaspoons vanilla essence
  • 1/2 cups blackberry jam

  • Preheat the oven to 180°C.
  • Combine the flour, baking powder, cinnamon, and salt. In a mixing bowl, combine the butter and sugar. Add the eggs one at a time.
  • Add the vanilla and beat until everything is well incorporated. Gradually mix in the flour mixture alternately with the apple cider.
  • Place liners in a cupcake pan and pour the mixture into each one. Bake at 180°C for 15 minutes or until a toothpick inserted comes out clean. Remove from the oven and let cool completely.
  • For the frosting; combine the cream cheese with the butter and beat until smooth and well incorporated. Gradually add the powdered sugar, salt, and cinnamon.
  • Add the vanilla and beat until you have a creamy and easy-to-work-with frosting. Use a spoon or knife to make a hole in the center of the cupcakes, and add the blackberry jam.
  • Decorate with the frosting and add a blackberry.
