CuPCaKe´S Love... Vanilla Rainbow

This recipe is ideal for children's birthdays! It doesn't require skill and is super eye-catching. You can use any vanilla muffin recipe. Here’s one that turns out fluffy and tasty. First, you need to have a greased muffin pan.

  • 175 grams butter
  • 200 grams sugar
  • 2 units egg, large
  • 375 grams flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 pinch salt
  • 250 milliliters cow's milk
  • 1 tablespoon vanilla essence
  • 6 units food coloring

  • Preheat the oven to 180 degrees. Beat the butter with the sugar until you get a creamy mixture. Add the eggs one at a time, beating well after each addition. Sift the flour, along with the baking powder, baking soda, and salt. Incorporate the dry ingredients alternating with the milk and vanilla, and mix gently until well combined. (Up to this point, a typical muffin recipe!!) Now, you need to have as many bowls as colors you want to use and put a little of the mixture in each of them. In this case, there are 6 (violet, blue, green, yellow, orange, and red).
  • Put a different color in each bowl (liquid or paste food coloring). Stir well until the color looks uniform. Distribute a little of each color until reaching 2/3 of the mold or cupcake liner. It looks nicer if the order of the rainbow colors is respected. To do it this way, the cool colors (violet, blue, and green) should be placed first, followed by the warm colors (yellow, orange, and red).
  • Place the mold in the oven and bake at 180º for approximately 15 to 20 minutes, until they are firm and just golden.
  • To remove from the mold, first let them cool, and if you used a cupcake liner, remember to use a paraffined or well-greased one to take it out without issues.
  • For the frosting, you can use meringue, whipped cream, frosting, or buttercream. Preferably white, so they look delicate!!
