These are delicious lemon sorbet cupcakes. As the name suggests, they have an intense lemon flavor that is perfectly balanced with the sweetness of the cupcakes. Be sure to try them; they are delicious.
Preheat the oven to 170° C and prepare the cupcake molds with liners.
Beat the butter with the sugar until well combined. The longer you beat the butter, the more air the mixture will have, making the cupcakes fluffier.
Add the eggs one at a time and beat well between each addition.
Mix the baking powder with the flour. Add it to the mixture along with the milk and lemon juice, alternating the dry ingredients with the liquids.
Add the lemon zest and vanilla extract. Pour the mixture into the cupcake mold and bake at 170° C for 18 minutes. Remove from the oven and let cool completely before decorating.
For the frosting; Cream the butter with the powdered sugar. Beat for about 10 minutes.
And to finish, add the lemon juice and vanilla and mix well.
Put the frosting in a piping bag with a large open star tip and decorate the cupcakes. You can add sugar pearls.
