Mother's Day Cupcakes

Treat your mom with this delicious and simple vanilla cupcake recipe. The cupcakes are very fluffy, and you can decorate them in the shape of flowers to give them to your mom.

  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoons salt
  • 2/3 cups sugar
  • 3 eggs
  • 1/2 cups unsalted butter
  • 1/4 cups cow's milk
  • 2 teaspoons vanilla essence
  • 1 cup vegetable shortening
  • 2 1/2 cups icing sugar
  • 1 1/2 teaspoons vanilla essence
  • 2 tablespoons cow's milk
  • food coloring

  • Soften the butter and add the refined sugar.
  • Add the eggs one at a time. Beat well between each addition.
  • Mix the milk with the vanilla and sift the flour, salt, and baking powder. Add them to the mixture, alternating between dry and wet ingredients.
  • Scoop the mixture into the liners using an ice cream scoop. This way, all your cupcakes will come out the same size. Bake at 175°C for 18 minutes.
  • Take out of the oven and let them cool.
  • For the frosting: Cream the vegetable shortening and add the sifted powdered sugar.
  • Add the vanilla and milk. Beat until you have a creamy but firm consistency.
  • Divide the frosting into 4 parts. Color each part with your favorite color using food dye. Transfer them to a piping bag and use a 2D tip to decorate the cupcakes.
