This is an ideal recipe for kids; they are delicious vanilla cupcakes filled with Nutella. They are very easy to make, and you can prepare them with the kids. They are fluffy and have a creamy filling, perfect for sharing.
Preheat the oven to 180°C. Mix the pancake flour with the sugar.
In a bowl, beat the eggs, add the vanilla, and while continuing to beat, drizzle in the vegetable oil.
You can place the egg mixture in the mixer and gradually add the flour with the sugar. If you prefer, you can also mix the ingredients in the bowl; just add the flour to the egg mixture gradually, beating well between each addition. Beat or blend until you have a smooth mixture.
Place cupcake liners in the molds, divide the mixture into the cupcake molds only up to 3/4 of their capacity, as overfilling will cause them to spill over.
Bake at 180º for about 15 minutes or until they are fluffy and cooked; you can check by inserting a toothpick; if it comes out clean, they are ready.
To make them even tastier, make a small hole in the cupcake and fill it with Nutella while it is still warm. You can make the hole with a spoon or a knife.
