Snowman Cupcake

Christmas cupcake with vanilla cake filled with punch fruit jam and decorated with fondant. Great for sharing with family, and kids will love it.

  • 1 guava
  • 1 tejocote
  • 1/2 apples
  • 1 stick cinnamon
  • 2 prunes
  • 1/2 cups sugar
  • 250 grams butter
  • 3 eggs
  • 1 tablespoon vanilla essence
  • 1 tablespoon baking powder
  • 1 1/2 cups flour
  • 250 grams fondant
  • food coloring

  • Boil the fruits along with the cinnamon.
  • Preheat the oven to about 180ºC.
  • Melt a bit of butter and incorporate it with the flour, mixing well.
  • Once we have a somewhat even mixture, we add the eggs and essence.
  • Little by little, we add the baking powder to ensure it is well mixed.
  • Once our mixture is well prepared, we place liners in a cupcake or loaf pan and fill them to prevent sticking.
  • Leave them in the oven for about 30 minutes (check them with a toothpick since not all ovens heat the same, depending on whether they are new or old).
  • Once the fruits have boiled, we remove the cinnamon and put only the fruits with 1/4 cup of that same water into the blender.
  • It will have a jam-like consistency, and we sweeten with sugar to taste and to achieve a firmer consistency.
  • Once the cakes are well baked, we use a corer (an apple corer can work) to remove the center without reaching the bottom.
  • Once we are satisfied with the sweetness of the jam, we incorporate it in the center and cover it with the same cake we removed earlier.
  • For decoration, it is preferable to use white fondant to allow for painting.
  • It should be kneaded well to make it more moldable and create the snowmen; all you need is creativity. For the details, you can cut with the tip of a knife, and then just paint with edible colors; it's preferable to paint the fondant before assembling the figure.
