Vanilla Cupcake with Ice Cream

Traditional vanilla cupcake but with a special ingredient that gives it an extraordinary flavor. For vanilla lovers!!

  • 1 box cake mix, Vanilla Flavor
  • 3 eggs
  • 1 cup water
  • 1/3 cups vegetable oil
  • 1 teaspoon baking powder
  • 1 cup vanilla ice cream , at room temperature
  • vanilla frosting
  • strawberries, for decoration

  • Preheat the oven to 180°C. Place cupcake liners in two 12-cup molds.
  • Mix flour and baking powder, make a well in the center of the flour and pour in the eggs, water, and oil. Beat with a mixer to incorporate for about two minutes. Add the vanilla ice cream and continue beating for another 3 minutes until well combined.
  • Pour into the liners filling them 3/4 full, and bake for 20 to 22 minutes or until a toothpick inserted comes out clean.
  • Let cool on a wire rack.
