Vanilla Cupcakes with Flowers

  • 1 3/4 cups cake mix, vanilla
  • 1 1/4 cups flour
  • 1 cup butter with salt, at room temperature
  • 2 cups sugar
  • 1 teaspoon baking powder
  • 4 eggs
  • 1/2 cups cow's milk
  • 1/2 cups plain yogurt
  • 2 teaspoons vanilla essence
  • 1 cup unsalted butter, at room temperature (for the frosting)
  • 6 cups icing sugar, (for the frosting)
  • 1/2 cups cow's milk, (for the frosting)
  • 1 1/2 teaspoons vanilla essence, (for the frosting)
  • 50 grams fondant
  • red food coloring

  • Preheat the oven to 180ºC and place the cupcake liners in the muffin pans.
  • In a bowl, mix the flours, sugar, and baking powder.
  • In a mixer at medium speed, beat the butter.
  • Add and beat the eggs, milk, yogurt, and vanilla.
  • Add the dry ingredients to the previous mixture and beat until well combined.
  • Fill the cupcake liners to 2/3 full and bake for about 15-20 minutes.
  • For the frosting, mix the butter in a mixer until it is soft and creamy.
  • Add 4 cups of sugar, milk, and vanilla at low speed until well combined.
  • Add 2 more cups of sugar and mix until it is light and forms peaks.
  • Add 1 or 2 drops of red food coloring to tint the frosting light pink.
  • Store the frosting in the refrigerator until the cupcakes are cool; once cool, decorate with a piping bag.
  • Add 2 drops of red food coloring to the fondant and shape the roses. Decorate by placing them on top of the frosting.
