Gourmet Cupcakes

Recipe for making chocolate cupcakes filled with Oreo cookies and peanut butter, step by step.

  • 1 1/4 cups semi-sweet chocolate chip
  • 3/4 cups unsalted butter, or margarine
  • 1 1/2 cups icing sugar, sifted
  • 3 eggs
  • 2 teaspoons vanilla essence
  • 2 1/2 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoons salt
  • 2 teaspoons cocoa
  • 1 cup cow's milk, or water. If necessary, you can add ½ cup more.

  • Preheat the oven to 350 °F (175 °C).
  • Melt 1¼ cups of chocolate chips and the butter together in the microwave or on the stove over low heat, preferably in a double boiler. Stir until the chocolate is completely melted. Pour into an electric mixer bowl. Add the sugar and beat until combined. Add the eggs, one at a time, and then add the vanilla.
  • Measure, mix, and sift together the flour, baking soda, and salt. Also the 2 tablespoons of cocoa powder if you are using it for a darker tone.
  • With the mixer on low speed, add the flour mixture, alternating with the milk. Continue mixing for one minute or less, just until the flour is combined with the wet ingredients.
  • Pour into the prepared mold, with the filling.
  • For the filling, place 2 layers of Oreo cookies, one tablespoon of peanut butter, put it inside the cupcake mold, and pour the mixture we prepared earlier over it.
  • Bake for 10-15 minutes or until a toothpick inserted comes out clean. Cool for 10 minutes on a rack. Let cool completely before decorating.
