Jam-Filled Cupcakes

  • 2 cups Gamesa® pancake mix
  • 1 cup cow's milk
  • 1 1/2 cups butter
  • 1 cup sugar
  • 4 eggs
  • 1 teaspoon vanilla essence
  • 1 jar strawberry jam
  • 3 cups icing sugar
  • 1/2 teaspoons salt
  • 1/3 cups whole milk
  • 1 teaspoon vanilla essence

  • Preheat the oven to 180ºC.
  • In a bowl, beat 1 cup of butter until smooth.
  • Add the sugar and continue mixing.
  • Add the eggs and two cups of flour to the mixture and beat.
  • Add the milk and vanilla, mix everything until ensuring that the mixture is homogeneous and without lumps.
  • Place liners in a cupcake pan.
  • Pour 3/4 of the mixture into each liner and bake for 30 minutes.
  • For the frosting, beat 1/2 cup of butter until smooth.
  • Add powdered sugar, vanilla, and beat.
  • Take the cupcakes out of the oven.
  • Add the jam into a syringe and inject each cupcake.
  • Decorate the cupcakes with the frosting.
