Low Sugar Red Velvet Cupcakes
These red velvet cupcakes, in addition to being low in sugar and easy to make, are a true delight. They are ideal as a dessert for a low-sugar diet as they are sweetened with Splenda®.

1 teaspoon baking soda
1/2 teaspoons salt
2 cups sour cream
1 tablespoon red food coloring
1 teaspoon apple cider vinegar
1 tablespoon vanilla essence
1 cup Splenda, Granulated
1/2 cups unsalted butter , at room temperature
2 eggs
2 sticks cream cheese, low fat (for decoration)
1/2 cups unsalted butter , at room temperature (for decoration)
1 tablespoon liquid vanilla , (for decoration)
2 cups Splenda, Granulated (for decoration)
red fruit compote, to decorate with mint leaves

Preheat the oven to 180°C, place paper liners in cupcake molds.
Sift flour, cocoa, baking powder, baking soda, and salt.
Mix sour cream, red food coloring, vinegar, and vanilla; beat the butter with SPLENDA® Granulated and incorporate the eggs one by one.
Alternately add the dry ingredients with the liquids and pour into cupcake liners.
Bake at 180°C for approximately 15 minutes.
Let cool before decorating.
Preparation for decoration: Beat the cream cheese with the butter, SPLENDA® Granulated, and vanilla.
Cover each cupcake with the mixture and if desired, sprinkle with red fruits and mint leaves
