1 cup pancake mix
3 teaspoons baking powder
1 pinch salt
1 cup cow's milk, warm, mixed with the juice of 1 lemon
3 eggs
2 teaspoons vanilla essence
1 1/2 cups icing sugar
3/4 cups vegetable oil

Preheat the oven to 180°C.
Sift the flours, baking powder, and salt. Mix and set aside.
Blend the buttermilk, eggs, vanilla, sugar, and oil.
Add the mixture to the flour and beat with a whisk.
Divide the mixture into cupcake liners filling them 3/4 full.
Bake for 20 minutes.
