Passion Fruit Cupcakes

  • 100 grams butter, room temperature
  • 100 grams sugar
  • 2 tablespoons cow's milk
  • 2 tablespoons passion fruit pulp
  • 145 grams flour, sifted
  • 15 grams shredded coconut
  • 2 eggs
  • 1/2 teaspoons baking powder
  • 200 grams mascarpone cheese
  • 60 grams butter, room temperature
  • 100 grams icing sugar
  • 100 grams passion fruit pulp

  • Preheat the oven to 180°C.
  • Beat the butter with the sugar until creamy.
  • Add the eggs and beat until fully incorporated, then add the passion fruit and coconut.
  • Add the flour in three batches, until fully integrated. If the batter is too thick, add the milk by tablespoons, starting with one and mixing, until you have a creamy batter.
  • Fill the cups up to 3/4 full and bake for about 20 minutes.
  • For the frosting, drain the cheese to remove any whey and mix with the sugar, butter, and passion fruit. Add the sugar and beat until you have a smooth cream.
