Pop Corn Cupcakes

  • 3 cups flour
  • 1 1/2 teaspoons baking powder
  • 3/4 teaspoons salt
  • 12 tablespoons unsalted butter, at room temperature
  • 1 1/2 cups sugar
  • 4 eggs
  • 2 teaspoons vanilla essence
  • 1 1/4 cups cow's milk
  • 1 tub vanilla frosting
  • 1 bag mini marshmallows, white color
  • yellow food coloring

  • Preheat the oven to 180ºC. Put cupcake liners in a tray.
  • In a bowl, mix the flour, baking powder, and salt. In a mixer, cream the butter with the sugar until it has a fluffy consistency and is pale yellow. Add the eggs one at a time, beating until everything is incorporated. Add the vanilla.
  • Alternately add the flour mixture and milk to the mixer, making sure everything is well mixed.
  • Divide the mixture among the cupcake liners in the trays, filling them 3/4 full.
  • Bake for 20 minutes or until a toothpick inserted comes out clean.
  • While the cupcakes cool, place the marshmallows in a bowl and add a few drops of yellow food coloring, stirring with your hands so that the marshmallows are white and yellow, resembling popcorn.
  • Place the vanilla frosting on top of the cupcake and then add the marshmallows on top.
  • Place the cupcakes in some liners that are painted white with red.
