12 tablespoons unsalted butter, at room temperature
1 1/2 cups sugar
4 eggs
2 teaspoons vanilla essence
1 1/4 cups cow's milk
1 tub vanilla frosting
1 bag mini marshmallows, white color
yellow food coloring

Preheat the oven to 180ºC. Put cupcake liners in a tray.
In a bowl, mix the flour, baking powder, and salt. In a mixer, cream the butter with the sugar until it has a fluffy consistency and is pale yellow. Add the eggs one at a time, beating until everything is incorporated. Add the vanilla.
Alternately add the flour mixture and milk to the mixer, making sure everything is well mixed.
Divide the mixture among the cupcake liners in the trays, filling them 3/4 full.
Bake for 20 minutes or until a toothpick inserted comes out clean.
While the cupcakes cool, place the marshmallows in a bowl and add a few drops of yellow food coloring, stirring with your hands so that the marshmallows are white and yellow, resembling popcorn.
Place the vanilla frosting on top of the cupcake and then add the marshmallows on top.
Place the cupcakes in some liners that are painted white with red.
