1 1/2 cups unsalted butter
1 cup sugar , white
2 eggs
2 teaspoons vanilla essence
1 1/2 cups flour
2 teaspoons baking powder
1 1/2 cups evaporated milk, (you can also use skim milk)
food coloring, (in the colors of the rainbow)

Cut the butter into cubes at room temperature and mix with the sugar until a paste forms.
Add the eggs one by one.
Add vanilla.
Mix the dry ingredients (Baking Powder and Flour) and add one part first and then the other.
Then add evaporated or skim milk and the other part of the flour.
Divide the mixture into 5 bowls and tint each mixture with each of the food colorings.
Pour each color into a piping bag or use a spoon and put the same amount into each cupcake liner.
Bake at 175 degrees for 25 to 30 minutes. Insert a toothpick to check when they are ready.
Remove from the oven, wait for them to cool, and decorate.
