Strawberry and Champagne Cupcake

  • 1 cup flour
  • 1 teaspoon baking powder
  • 1/4 teaspoons salt
  • 1/4 cups butter
  • 1/4 cups sugar
  • 1 egg
  • 1/2 teaspoons vanilla essence
  • 3/4 cups strawberries, a little crushed
  • 1/4 cups champagne
  • 1 package cream cheese
  • 1 1/2 cups icing sugar
  • 1/4 cups strawberries, smoothies
  • 6 strawberries

  • In a bowl, sift the flour, baking powder, and salt.
  • Lightly beat the butter with the sugar and slowly add the egg and vanilla.
  • Gradually add the dry ingredients, alternating with the crushed strawberry and champagne.
  • Place the cupcake liners in the cupcake molds. Pour the mixture until three-quarters full. Bake at 180 ºC for 20 minutes.
  • For the frosting: lightly beat the cream cheese with the powdered sugar and blended strawberry. Decorate with the frosting and half a strawberry.
