Vanilla Cupcakes with Lemon Glaze

  • Preheat the oven to 180ºC.
  • Place the butter in a bowl, beat it until creamy, then gradually add the sugar, integrating the 2 eggs one at a time while continuing to beat, then add the vanilla extract.
  • In another bowl, mix the flour and baking powder, sifting it over the butter mixture.
  • When half of the ingredients have been incorporated, add the milk, continue mixing on low speed, and finish incorporating the flour.
  • In a cupcake mold, place 12 cupcake liners, pour the previous mixture into them, filling only 3/4 of the way with the mixture. Bake for 25 minutes or until golden. Let cool and decorate.
  • For the glaze: Place the egg white in a bowl, beat with a fork, add the powdered sugar using a sifter, continue mixing, add the lemon extract and drops of food coloring, and keep beating until you get a smooth mixture (not liquid).
  • Decorate the cupcakes with the glaze, embellish with colorful sprinkles and edible glitter.
