Date and Oatmeal Cookies

These delicious cookies are made from an oatmeal dough with dates.

  • 2 sticks unsalted butter
  • 1 cup brown sugar
  • 1/4 cups vegetable margarine
  • 3/4 cups sugar
  • 2 eggs
  • 1 tablespoon vanilla essence
  • 2 1/2 cups oats, natural
  • 2 cups flour
  • 1/2 tablespoons baking soda
  • 1/2 tablespoons salt
  • 1/2 tablespoons cinnamon
  • 1 1/2 cups dates, chopped

  • Preheat the oven to 180 degrees Celsius.
  • In an electric mixer, beat the butter with the margarine until well combined.
  • Add the brown sugar and sugar and beat until you achieve a fluffy dough.
  • Add the eggs and vanilla and continue mixing.
  • In a large bowl, mix the oats, flour, baking soda, salt, cinnamon, and dates.
  • Gradually incorporate the flour mixture into the butter mixture in an electric mixer until you have the cookie dough.
  • Prepare 2 baking sheets with cooking spray or butter, and using a spoon, place a bit of dough for each cookie, ensuring that the cookies are a bit spaced apart so they don’t merge.
  • Bake the cookies for 12 minutes or until they are golden brown. Remove from the oven and allow to cool before serving.
