Place the strawberries and sugar in a blender. Blend for 5 minutes or until completely crushed. Set aside.
Place the heavy cream in a bowl and whip with a hand mixer for 5 to 6 minutes or until it doubles in size and forms peaks when lifting the mixer.
Gradually add the strawberry puree and gently fold it in. Once fully mixed, add two tablespoons of the strawberry mixture to the hydrated gelatin and mix quickly to have the same temperature.
Pour the gelatin into the strawberry mixture and stir. Then place the mixture in a silicone mold and refrigerate for two hours.
Serve on a flat plate and decorate with strawberries.
