In a large bowl mix the milk and the yeast, add the sugar, eggs and vanilla. Add 1 cup of flour and salt. Slowly add the rest of the 2 1/4 cups, stirring constantly. Knead until forming a soft dough. Transfer to an oven tray, cover with plastic and refrigerate for 30 min.
Beat the butter and 1/4 cup of flour with a mixer until smooth. Place the cold dough on a floured surface and with a roller flatten in a rectangle shape. Spread the butter mixture evenly over the dough. Fold the dough in three parts, cover with plastic and refrigerate for 30 more minutes.
Remove the dough from the refrigerator and with a roller re-form a rectangle, then fold the two edges in half. Refrigerate for 30 minutes, repeat the folding and cooling sequence twice more, finally let the dough cool for at least one hour.
In a large pot heat 5 inches of oil until hot. Stretch the dough with 3 to 6 centimeters thick and cut into rings. Cook the cronuts in the oil and brown on both sides. Pass to a plate with kitchen napkin to remove excess fat.
Mix the icing sugar, the syrup and the cream for the glaze. Cover the donuts with the glaze when they are still hot.
