Cronut

The cronut is a combination between croissant and donut, it is an original and exquisite recipe, you can not miss this delight your whole family will love.

  • 3/4 cups cow's milk, hot
  • 1 tablespoon active dry yeast
  • 1/3 cups sugar
  • 2 eggs
  • 1 teaspoon vanilla essence
  • 3 1/2 cups flour
  • 1 teaspoon salt
  • 1 cup butter, at room temperature
  • 1/2 cups icing sugar
  • 3 tablespoons maple syrup
  • 2 tablespoons whipping cream
  • vegetable oil, to fry

  • In a large bowl mix the milk and the yeast, add the sugar, eggs and vanilla. Add 1 cup of flour and salt. Slowly add the rest of the 2 1/4 cups, stirring constantly. Knead until forming a soft dough. Transfer to an oven tray, cover with plastic and refrigerate for 30 min.
  • Beat the butter and 1/4 cup of flour with a mixer until smooth. Place the cold dough on a floured surface and with a roller flatten in a rectangle shape. Spread the butter mixture evenly over the dough. Fold the dough in three parts, cover with plastic and refrigerate for 30 more minutes.
  • Remove the dough from the refrigerator and with a roller re-form a rectangle, then fold the two edges in half. Refrigerate for 30 minutes, repeat the folding and cooling sequence twice more, finally let the dough cool for at least one hour.
  • In a large pot heat 5 inches of oil until hot. Stretch the dough with 3 to 6 centimeters thick and cut into rings. Cook the cronuts in the oil and brown on both sides. Pass to a plate with kitchen napkin to remove excess fat.
  • Mix the icing sugar, the syrup and the cream for the glaze. Cover the donuts with the glaze when they are still hot.
