Separate the yolk from the white of each egg. In a bowl, beat the yolks, add powdered sugar, cocoa, and a tablespoon of concentrated coffee.
In a separate bowl, beat the egg whites until stiff peaks form, adding a tablespoon of powdered sugar. Continue beating until peaks form. Pour this mixture in three parts into the egg yolk mixture.
Place the remaining concentrated coffee or espresso on a plate, soak the donuts in it for 5 seconds.
On a large serving plate, arrange a layer of donuts, followed by a layer of mascarpone cream, using a spatula to spread it well. Repeat until the mold is filled, finishing with a layer of cream. Decorate with cocoa powder and solid chocolate.
If you want to make the individual version, chop the donuts and stack the pieces, covering them with cream cheese and you're done.
