Krafnes

A delicious recipe from Croatia, Krafnes are homemade donuts dusted with powdered sugar. You can serve this original dish as a dessert or snack.

  • 250 milliliters whole milk
  • 4 teaspoons sugar
  • 1 envelope yeast
  • 2 1/2 cups flour
  • 2 teaspoons salt
  • 50 grams unsalted butter , at room temperature
  • 2 egg yolks
  • 1 tablespoon rum
  • lime zest
  • orange zest
  • 1 teaspoon liquid vanilla
  • 1/4 cups ricotta cheese
  • 1 egg, to assemble the donuts
  • powdered sugar, for decorating
  • oil , for frying

  • Dissolve the sugar in hot milk, add the yeast, and let it activate for 15 minutes.
  • Mix the flour, yeast, and other ingredients except the ricotta cheese and powdered sugar. Knead until you achieve a smooth dough consistency.
  • Place the dough in a greased bowl, cover, and let it rise in a warm place for 1 hour.
  • Place the dough on a floured surface and roll it out with a rolling pin until it is half a centimeter thick.
  • Use a cookie cutter to cut out 6-centimeter circles.
  • Spoon a bit of ricotta cheese onto half of the circles, put some of the egg mixture around the circle, and cover with another circle. Seal the sides with your fingers.
  • Cover the donuts with a cloth and let them rise for another half hour.
  • Fry the donuts in hot vegetable oil until golden brown (3 minutes on each side). Remove from the oil and place on paper towels to absorb excess oil.
  • Decorate with powdered sugar just before serving.
