Easy and Economical Carrot Cake

Prepare this carrot cake in a very simple and easy way, as you don't need a blender, mixer, or any electric appliance to make it. Additionally, enhance the cake's flavor with Granvita® Fruit Granola, you will love it!

  • 2 tablespoons cinnamon powder, for the mixture

  • 1 cup sugar, for the mixture
  • 2 cups vegetable oil, for the mixture
  • 6 eggs, for the mixture
  • 3 cups carrot, grated, for the mixture
  • 1 cup Granola with Fruits Granvita®, for the mixture
  • 1/2 cups butter, in cubes, for the frosting
  • 1 1/2 cups cream cheese, in cubes, for the frosting
  • 1 tablespoon lime juice, seedless, for the frosting
  • 1 cup icing sugar, for the frosting
  • carrot, grated, for decorating
  • Granola with Fruits Granvita®, for decorating

  • Preheat the oven to 180 °C.
  • Sift the flour together with the baking soda in a bowl, then add the cinnamon and salt until well combined. Incorporate the sugar and oil, mix and add the eggs one at a time, the carrot, and the Granvita® Fruit Granola until fully integrated.
  • Pour the mixture into a previously greased rectangular baking dish. Bake at 180 °C for 35 minutes. Remove from the oven and let cool.
  • While the cake is cooling, prepare the frosting. Cream the butter and cream cheese in a bowl using a whisk or silicone spatula, then add the lemon juice, powdered sugar, and mix until fully integrated.
  • Spread the carrot cake with frosting, decorate with grated carrot and Granvita® Fruit Granola.
