  • 3 cups vegetable oil, for the sponge cake
  • 3 cups sugar, for the sponge cake

  • 3 cups milk, lukewarm, for the sponge cake

  • 3 tablespoons baking soda, for the sponge cake
  • 1 tablespoon green food coloring, for the sponge cake
  • 1 tablespoon blue food coloring, for the sponge cake
  • 1 tablespoon purple food coloring, for the sponge cake
  • 1 tablespoon pink food coloring, for the sponge cake
  • 1 tablespoon yellow food coloring, for the sponge cake
  • 1 tablespoon orange food coloring, for the sponge cake
  • 3 cups vanilla frosting, for the filling and the frosting
  • 1 cup frosting, pink
  • 1 cup frosting, yellow
  • 1 cup frosting, green
  • 1 cup frosting, blue
  • 1 cup frosting, purple

  • For the sponge cake: In a blender, combine vegetable oil, eggs, milk, and vanilla essence.
  • Blend the ingredients for 5 minutes until completely incorporated.
  • Add sugar and cake mix little by little and blend until a homogenous batter is obtained. Divide batter into 6 different containers and add some drops of a different food coloring to each.
  • Mix each one of the batters for 5 minutes until the color is uniform.
  • Place each batter into round cake pans of the same size and bake at 356 °F for 15 minutes.
  • Remove from oven and let rest for assembling the cake.
  • For assembling the rainbow birthday cake: Place the purple sponge cake as the base, add two tablespoons of vanilla frosting on top, and spread evenly with a frosting spatula. Place the blue sponge cake on top, add two tablespoons of vanilla frosting on top, and spread evenly with a frosting spatula. Repeat the steps for the remaining sponge cakes in the following order: green, yellow, red, and pink.
  • Using a piping bag and a frosting spatula crumb coat the cake with vanilla frosting. Refrigerate for 1 hour.
  • Place each colorful frosting in a piping bag and frost a line of each color from top to bottom in the following order: pink, yellow, green, blue, and purple. Frost the top of the cake with purple frosting. Smooth out the colorful frostings evenly with a frosting spatula. Outline the top of the cake with colorful frosting rosettes. Serve rainbow birthday cake.
