  • 3 cups cream cheese
  • 2 tablespoons vanilla essence
  • 1 1/2 cups whipping cream
  • 1 cup dulce de leche
  • 1 cup chocolate bar, with peanuts, in chunks, for garnish

  • Preheat the oven to 180 ° C.
  • Place waxed paper in an oven-safe mold, grease the walls of the mold with a little butter at room temperature and reserve.
  • Add the chocolate chip cookies, chocolate cookies, cinnamon and butter to a processor until everything is integrated. Pour into the mold and with the help of a spoon completely cover the base. Cover with adhesive plastic. Refrigerate for 30 minutes.
  • Add the chopped chocolate to a bowl and place over a pot with boiling water (a bain-marie), make sure the bowl is the right size so it doesn't sink.
  • Add the sugar and eggs to a blender and mix until you get a light and creamy consistency; add the cream cheese and beat until well blended. Pour in the melted chocolate, cocoa and vanilla essence, and add the whipping cream.
  • Pour the preparation into the mold with the cookie base. Bake at 180 ° C for 1 hour or until the cheesecake is firm in the center. Chill.
  • Refrigerate 2 hours. Decorate with the dulce de leche, the chocolate pieces, the peanuts and sprinkle with the cocoa.
