Preheat the oven to 180°C.
Place parchment paper in an oven-safe pan, grease the sides of the pan with a little room temperature butter, and set aside.
Add the chocolate chip cookies, chocolate cookies, cinnamon, and butter to a processor until everything is combined. Pour into the pan and, using a spoon, cover the base completely. Cover with plastic wrap. Refrigerate for 30 minutes.
Add the chopped chocolate to a bowl and place over a pot of boiling water (double boiler), making sure the bowl is the right size so it doesn't sink.
Add sugar and eggs to a mixer and mix until you get a light and creamy consistency; add the cream cheese and beat until well combined. Pour in the melted chocolate, cocoa, and vanilla extract, and incorporate the heavy cream.
Pour the mixture into the pan with the cookie base. Bake at 180°C for 1 hour or until the cheesecake is firm in the center. Cool.
Refrigerate for 2 hours. Decorate with dulce de leche, chocolate pieces, peanuts, and sprinkle with cocoa.
