Easy Chocolate Cheesecake

  • 2 tablespoons butter, at room temperature, to grease the pan
  • 1 1/2 cups chocolate chip cookie
  • 1 1/2 cups chocolate cookies
  • 1/2 teaspoons cinnamon
  • 1 cup butter, melted
  • 1 cup chocolate, chopped
  • water, boiling
  • 1/2 cups sugar
  • 3 eggs
  • 3 cups cream cheese
  • 2 tablespoons vanilla essence
  • 1 1/2 cups whipping cream
  • 1 cup dulce de leche
  • 1 cup chocolate bar, with peanuts, in pieces, for decoration
  • 1/2 cups peanuts
  • 1 tablespoon cocoa

  • Preheat the oven to 180°C.
  • Place parchment paper in an oven-safe pan, grease the sides of the pan with a little room temperature butter, and set aside.
  • Add the chocolate chip cookies, chocolate cookies, cinnamon, and butter to a processor until everything is combined. Pour into the pan and, using a spoon, cover the base completely. Cover with plastic wrap. Refrigerate for 30 minutes.
  • Add the chopped chocolate to a bowl and place over a pot of boiling water (double boiler), making sure the bowl is the right size so it doesn't sink.
  • Add sugar and eggs to a mixer and mix until you get a light and creamy consistency; add the cream cheese and beat until well combined. Pour in the melted chocolate, cocoa, and vanilla extract, and incorporate the heavy cream.
  • Pour the mixture into the pan with the cookie base. Bake at 180°C for 1 hour or until the cheesecake is firm in the center. Cool.
  • Refrigerate for 2 hours. Decorate with dulce de leche, chocolate pieces, peanuts, and sprinkle with cocoa.
