Blueberry Cookies with Red Fruit Tea

These are very crunchy cookies that burst with blueberries in your mouth when you bite into them.

  • 120 grams sugar
  • 120 grams brown sugar
  • 2 eggs
  • 2 tablespoons vanilla essence
  • 10 grams mixed berries
  • 200 grams flour
  • 2 teaspoons baking powder
  • 2 tablespoons cranberries

  • Beat the butter with the sugars, add the eggs, and cream well. Add the essence, then the flour, baking powder, and finally the blueberries.
  • Form cylinders, wrap in freezer paper, and refrigerate for half an hour.
  • Then cut into medallions of 1/2 cm, flatten with your hand on a baking sheet sprayed with vegetable oil, and bake at 180°C for 15 minutes.
