Alpen Muesli Cereal Cookies

These cookies are perfect for kids' lunch or as an afternoon snack. Even better if they are freshly baked and served with a glass of cold almond milk.

  • 1 cup Alpen® cereal muesli
  • 3/4 cups whole-wheat flour
  • 1/2 teaspoons salt
  • 1/2 teaspoons baking soda
  • 1/2 teaspoons vanilla essence
  • 1 egg
  • 3/4 cups brown sugar
  • 1/2 cups unsalted butter, at room temperature
  • 3/4 cups chocolate chips

  • Preheat the oven to 375F or 190C.
  • Mix the flour, salt, and baking soda.
  • In a mixer, cream the butter with the sugar. Add the vanilla extract.
  • Add the egg and mix with the flour.
  • Incorporate the Alpen Muesli cereal and chocolate chips.
  • Using your hands, form small balls of the mixture and place them on a baking sheet lined with parchment paper.
  • Bake for 10-12 minutes and let cool on a wire rack.
