Preheat the oven to 180ºC. Grease or line a baking sheet with parchment paper.
Separate the egg white from the yolk; we will use the white (do not throw away the yolk), beat the white until it forms a foam.
In another bowl, add the standard sugar and butter; beat until there are no lumps. Then add the whipped egg whites and beat gradually. Add the yolk.
In a separate bowl, mix the flour, salt, and baking powder. Add the brown sugar and chocolate chips until the mixture is a yellowish color and lump-free.
On the already greased baking sheet or lined with parchment paper, start placing balls of the dough, trying not to place them too close together or make them too large. Bake for about 10 to 15 minutes.
Insert a fork or toothpick into the cookies; if it comes out clean or with few crumbs, they are ready. If not, bake for a few more minutes.
