Delicious Jam Cookies

For any occasion, delicious jam cookies. They are always a hit at tea time. Easy to prepare, just put in some enthusiasm. To surprise a loved one, something homemade.

  • 150 grams unsalted butter
  • 110 grams sugar
  • 2 egg yolks
  • 1 dash vanilla essence
  • 1 lemon , (its zest)
  • 250 flour
  • 50 grams cornstarch
  • 1 pinch salt
  • jam, to taste

  • Put the butter at room temperature and the sugar in a bowl. Beat. Add the egg yolks, vanilla essence, and lemon zest; continue beating until creamy.
  • Sift the flour, cornstarch, and salt into another bowl and incorporate it into the previous mixture. Mix with folding motions until well combined and a dough forms. Take the dough and wrap it in plastic wrap. Refrigerate for one hour.
  • Using a round cookie cutter of 5 cm in diameter, cut out the cookies. With a smaller round cutter, cut and remove the center of half of the cookies. Preheat the oven to 180° C for 15 minutes. Place the cookies on a baking tray lined with parchment paper and bake at the same temperature until just golden (about 10-12 minutes). Remove and let cool.
  • Place a tablespoon of jam in the center of each cookie and spread the circles carefully to avoid spilling the jam to the edges. Makes about 32 units. Ready for tea.
