  • For the filling: using an electric mixer on medium speed, beat the cream cheese until smooth.
  • Add the lemon juice and vanilla extract. Mix well.
  • Place a ring of aluminum foil around the cookie and add some of the previous mixture before freezing it for approximately 2 hours.
  • Remove from the freezer and decorate with a strawberry, powdered sugar, and a bit of the mixture to cover the edge of the cookie.
