Chocolate Mint Cookies

  • 2 cups flour
  • 1/2 cups cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoons salt
  • 1 cup unsalted butter , at room temperature
  • 1/2 cups sugar
  • 1 cup raw sugar
  • 2 eggs
  • 1 teaspoon peppermint extract
  • 1 bag mint christmas candy, chopped
  • 1 stick white chocolate

  • Oven at 180° C.
  • In a medium bowl, mix the flour with the cocoa, baking powder, and salt.
  • Cream the butter with the sugar at medium speed until fluffy, about 2 minutes. Lower the speed and add the egg with the mint extract, beating until well combined.
  • Add the dry ingredients and mix until a smooth dough forms. Refrigerate for 1 hour.
  • Using an ice cream scoop, place some of the previous mixture on a baking sheet and bake for 10 minutes or until lightly golden.
  • Melt the white chocolate, dip half of the cookies, and sprinkle with mint candies.
