Sift all the dry ingredients except the almonds into a medium bowl.
In a separate bowl, mix all the wet ingredients until the oil no longer separates.
Add to the dry ingredients, stir with 1/4 cup of the almonds and chocolate chips. Mix by hand until fully combined. Roll out the dough with a rolling pin and use a round cookie cutter to cut the dough, placing the circles on baking sheets lined with parchment paper.
Decorate each cookie with half a cherry in the center and sliced almonds around it to make a flower.
Bake at 180°C for no more than 11 minutes. Remove from the oven and let cool for 3 minutes. Serve.
