In a small bowl, combine the flour, baking powder, and salt. Set aside.
Beat the sugar and butter, add the egg, vanilla extract, and almond extract, and continue beating. Gradually add the flour mixture and beat until well combined. Knead the mixture a little with your hands until it forms a dough.
Form a ball with the dough and wrap it in plastic wrap. Let it rest in the refrigerator for about 1 hour.
Preheat the oven to 180ºC.
Take the dough out of the refrigerator and on a floured surface, use a rolling pin to roll out the dough until it is 3 cm thick. Use a boot-shaped cutter to cut out the dough and transfer each cookie to a baking sheet lined with parchment paper.
Bake for 9-10 minutes, or until the tops of the cookies look dry but the edges are not browned. Let cool and use a piping bag to decorate with vanilla frosting dyed in different colors.
