Christmas Boot Cookies

  • 3 cups flour
  • 2 teaspoons baking powder
  • 1/2 teaspoons salt
  • 1 cup sugar
  • 1 cup unsalted butter
  • 1 egg
  • 1 teaspoon vanilla essence
  • 1 teaspoon almond extract
  • 1 tub vanilla frosting, (for decoration)
  • food coloring, (for decoration)

  • In a small bowl, combine the flour, baking powder, and salt. Set aside.
  • Beat the sugar and butter, add the egg, vanilla extract, and almond extract, and continue beating. Gradually add the flour mixture and beat until well combined. Knead the mixture a little with your hands until it forms a dough.
  • Form a ball with the dough and wrap it in plastic wrap. Let it rest in the refrigerator for about 1 hour.
  • Preheat the oven to 180ºC.
  • Take the dough out of the refrigerator and on a floured surface, use a rolling pin to roll out the dough until it is 3 cm thick. Use a boot-shaped cutter to cut out the dough and transfer each cookie to a baking sheet lined with parchment paper.
  • Bake for 9-10 minutes, or until the tops of the cookies look dry but the edges are not browned. Let cool and use a piping bag to decorate with vanilla frosting dyed in different colors.
