  • 1 cup unsalted butter
  • 1 1/2 cups brown sugar
  • 1 egg
  • 2 1/4 cups flour
  • 2 teaspoons baking powder
  • 1/2 teaspoons salt
  • 1 tablespoon cinnamon powder

  • Preheat the oven to 180°C.
  • Combine the butter and sugar until creamy. Add the egg and beat well. Mix the flour with the salt, cinnamon, and baking powder. Gradually incorporate the flour mixture.
  • Finish kneading by hand and cover the dough with plastic wrap and refrigerate the dough for 2 hours.
  • Roll out the dough and cut out the desired shapes using cookie cutters. Place the shapes on a baking sheet lined with parchment paper and bake at 180°C for 10 minutes or until the edges are lightly golden. Be careful not to overbake them as they will become too hard to eat.
  • Remove from the oven and let cool completely. You can decorate them with royal icing, glaze, and chocolate.
