This holiday season you can treat all your friends to a very soft cookie with an intense ginger flavor filled with Nutella, decorated with a delicious icing. They are perfect for gifting to that special someone.
In a mixer, cream the butter with the sugar, honey, and egg yolk.
Gradually add the flour, ground ginger, and cinnamon, beating until a homogeneous dough is obtained. Cover with non-stick plastic wrap and refrigerate for 20 minutes.
On a floured surface, roll out the dough to a thickness of 3mm, using a gingerbread man cookie cutter to cut out 10 pieces.
Place on a baking sheet and bake for 15 minutes. Let cool and set aside.
Form cookie sandwiches by filling with a spoonful of Nutella. Set aside.
For the icing, mix the powdered sugar with lemon juice. Place in a piping bag with a plain tip and decorate the cookies with the icing and melted chocolate. Let dry.
Serve with milk.
