Gingerbread Cookies with Nutella

This holiday season you can treat all your friends to a very soft cookie with an intense ginger flavor filled with Nutella, decorated with a delicious icing. They are perfect for gifting to that special someone.

  • 1 cup butter, at room temperature
  • 3/4 cups sugar
  • 1/4 cups honey
  • 1 egg yolk
  • 3 cups flour
  • 1 teaspoon ginger powder
  • 1 teaspoon cinnamon
  • 5 tablespoons nutella
  • 1 cup icing sugar, for the icing
  • 3 tablespoons lime juice, for the icing
  • bittersweet chocolate, melted

  • Preheat the oven to 180° C.
  • In a mixer, cream the butter with the sugar, honey, and egg yolk.
  • Gradually add the flour, ground ginger, and cinnamon, beating until a homogeneous dough is obtained. Cover with non-stick plastic wrap and refrigerate for 20 minutes.
  • On a floured surface, roll out the dough to a thickness of 3mm, using a gingerbread man cookie cutter to cut out 10 pieces.
  • Place on a baking sheet and bake for 15 minutes. Let cool and set aside.
  • Form cookie sandwiches by filling with a spoonful of Nutella. Set aside.
  • For the icing, mix the powdered sugar with lemon juice. Place in a piping bag with a plain tip and decorate the cookies with the icing and melted chocolate. Let dry.
  • Serve with milk.
