Grinch Cookies

No matter how Grinchy you are, you always have a good friend. Have your cookie cutters ready, this Christmas we give you this recipe for Grinch Cookies, the holiday character who hates Christmas. The recipe is very easy to make, as they are just butter cookies, but the fun part is decorating the cookies with icing. Change your traditional decorated cookies for Christmas and make these original Grinch Cookies.   • 2 1/2 cups butter, at room temperature, for cookie dough
  • 1 3/4 cups icing sugar, for the cookie dough
  • 1 egg, for cookie dough
  • 1 egg yolk, for cookie dough
  • 1 1/2 teaspoons salt, for cookie dough
  • flour, for rolling out
  • 1 1/2 cups icing sugar, for the icing
  • 2 tablespoons cow's milk, for the icing
  • food coloring, black, brown, green, and red
  • nonpareil sprinkles, for decorating
  • 4 1/4 cups flour, for the cookie dough

  • Preheat the oven to 170° C
  • For the cookie dough, add the butter to the mixer and beat with the sugar until a dough forms, add the egg and the yolk, beat until incorporated, add the vanilla extract, flour, and salt, continue beating until the ingredients are combined. Remove the dough from the mixer, wrap in non-stick plastic and refrigerate for 30 minutes.
  • On a table, place a little flour and roll out the dough to a thickness of 3mm, using cookie cutters, cut the dough and place it on a previously greased and floured baking tray.
  • Refrigerate the cookies until they are firm enough and bake for 8 to 10 minutes or until the edges are golden. Remove and cool.
  • For the icing, mix the powdered sugar with the milk until you have a consistent mixture.
  • Separate the icing into different bowls and color with food coloring to your liking. Place in piping bags.
  • Decorate the cookies to your liking and let them dry. Enjoy.
