Lemon Powdered Cookies

  • 2/3 cups unsalted butter, at room temperature
  • 1/3 cups icing sugar
  • 2 limes, only the zest
  • 1/4 cups lime juice
  • 1 teaspoon vanilla essence
  • 1 pinch salt
  • 1 3/4 cups all-purpose wheat flour
  • 1 tablespoon cornstarch
  • 2/3 cups icing sugar, for dusting

  • Oven preheated to 180° C
  • Cream the butter with the sugar until you get a smooth paste. Add the lemon zest, juice, and vanilla, and continue beating until perfectly combined.
  • Add the salt with the flour and cornstarch. Beat until you have a homogeneous and smooth dough.
  • Place the dough on a floured surface and divide it into two equal parts. Roll each piece of dough into a cylinder 5 cm in diameter, cover with cling film, and refrigerate for two hours.
  • Remove the paper and cut into 1 cm thick slices. Bake for 10 minutes or until lightly golden. Sprinkle with powdered sugar to taste.
