Snowman Meringue Cookies

A delicious and creative recipe for snowman meringue cookies. It’s a tasty and very original dessert, plus you can decorate it with your kids—they will love it.

  • 300 grams butter, (cookies)
  • 200 grams sugar, (cookies)
  • 2 eggs, (cookies)
  • 500 grams flour, (cookies)
  • 1 tablespoon vanilla essence, (cookies)
  • 2 egg whites, (meringues)
  • 100 grams icing sugar, (meringues)
  • 75 grams chocolate chips, (for decorating)
  • 1 vanilla frosting, (for decorating)
  • orange food coloring, (for decorating)
  • icing sugar, for sprinkling

  • Mix the butter (at room temperature) with the sugar.
  • Add the eggs and vanilla essence, and continue stirring.
  • Add the flour and continue beating; when half of the flour is incorporated, knead by hand.
  • Let the dough rest for one hour in the refrigerator covered with plastic wrap.
  • Preheat the oven to 180º.
  • Place the dough between two pieces of clear kitchen plastic and, using a rolling pin, roll out to a thickness of half a centimeter.
  • Cut the cookies with a round cutter and carefully place them on a non-stick baking tray.
  • Bake for about 15-20 minutes, until they look golden but still a little soft. Then let cool on a wire rack.
  • Preheat the oven to 140°C. Grease a baking sheet and line it with parchment paper. Place the egg whites in a large bowl and beat with an electric mixer until the mixture is thick, white, and forms stiff peaks.
  • Add approximately 1/3 of the sugar and beat again until the egg whites look stiff and shiny. Add the rest of the sugar and continue beating until stiff peaks form.
  • Using a smaller spoon on another tray covered with parchment paper, make smaller circles to create the heads.
  • Bake for 1 hour or until the base of the meringues feels dry and crunchy.
  • Place the chocolate chips in a double boiler and stir until completely melted.
  • Remove the meringues from the oven.
  • To form the cookies, take one cookie and, with a bit of frosting, attach the bottom of the body (the large circle) to the cookie, then stick the head (small circle) onto the large meringue with the frosting. Do the same with each cookie.
  • Finally, paint a little orange frosting to make the nose of each snowman, paint the eyes and buttons with chocolate. Sprinkle with powdered sugar and serve.
