500 grams wheat flour
115 grams sugar
2 egg yolks
1/2 teaspoons baking soda
1/4 kilos lard
2 oranges
cinnamon powder

Preheat the oven to 180°C.
Sift the flour in a bowl.
Sift the flour again on a flat surface, forming a volcano, and add the baking soda.
In the center of the volcano, pour in the egg yolks, sugar, and mix with your fingers without breaking the volcano.
Grate the orange peel with a fine grater and hydrate it with the juice of the oranges, then let it rest.
In the center of the volcano, pour in the semi-liquid or soft lard and mix with the rest of the flour until a uniform dough forms.
Incorporate the orange zest and juice, and knead.
Roll out the dough with a rolling pin and cut into circles.
Place on a baking tray and bake until the base of the polvorones takes on a light brown color.
While still warm, sprinkle the polvorones with sugar and cinnamon.
