Christmas Orange Polvorones

  • Preheat the oven to 180°C.
  • Sift the flour in a bowl.
  • Sift the flour again on a flat surface, forming a volcano, and add the baking soda.
  • In the center of the volcano, pour in the egg yolks, sugar, and mix with your fingers without breaking the volcano.
  • Grate the orange peel with a fine grater and hydrate it with the juice of the oranges, then let it rest.
  • In the center of the volcano, pour in the semi-liquid or soft lard and mix with the rest of the flour until a uniform dough forms.
  • Incorporate the orange zest and juice, and knead.
  • Roll out the dough with a rolling pin and cut into circles.
  • Place on a baking tray and bake until the base of the polvorones takes on a light brown color.
  • While still warm, sprinkle the polvorones with sugar and cinnamon.
