Some cookies with chocolate and colorful sprinkles that have a delicious taste and are very colorful thanks to the sprinkles. The chocolate coating gives them a delightful flavor.
Mix the flour with the almonds in a food processor. Blend until the almonds are finely ground.
Add 2 more tablespoons of flour and the baking powder, cinnamon, and salt. Stir again.
Place the sugar and butter in a mixing bowl. Cream the butter for 3 minutes and add the egg yolks. Continue beating until fluffy.
Gradually add the flour mixture to the yolk mixture until a dough forms. Knead it a couple of times with your hands.
Divide the dough in half and place it on plastic wrap (egapack) and wrap each ball of dough. Let cool for 1 hour.
After an hour, preheat the oven to 180 degrees and sprinkle flour on a flat surface to work on.
Remove the dough and flatten it until it is about 3 mm thick. Use a star or heart-shaped cutter to cut out each cookie (about 36 cookies should come from each batch).
Arrange the cookies on a greased baking sheet (about 2 cm apart to prevent sticking) and bake for 10 minutes.
Let cool on a wire rack.
Melt the chocolate. Dip part of the cookies in the chocolate and then coat them with the colorful sprinkles. Let the chocolate set and then serve.
