Granola Cookies with Carrot and Orange

Easy to make cookies, nutritious and help with digestion.

  • 2 cups granola
  • 1 cup wheat flour 1 cup wheat flour
  • 1/4 cups cornstarch  1/4 cups cornstarch
  • 1 1/2 cups carrot  , grated 1 1/2 cups carrot , grated
  • 1 tablespoon orange zest 1 tablespoon orange zest
  • 3/4 cups oil  3/4 cups oil
  • 1/4 cups honey 1/4 cups honey
  • 1 egg 1 egg

  • Preheat the oven to 180ºC.
  • In a bowl, put the granola, flour, cornstarch, carrot, orange zest, oil, honey, and egg.
  • Mix all the previous ingredients until well incorporated.
  • With a tablespoon, take a portion of the desired size for your cookies, or wear rubber gloves to shape them.
  • Place the portions on the tray and put them in the oven (preheated) for 20 minutes at 200ºC.
  • Once ready, you can offer them as snacks, dessert, lunch, etc.
