Preheat the oven to 180 degrees Celsius. Grease and flour a baking sheet.
In an electric mixer, mix the butter, sugar, egg, and almond extract.
Mix gradually with the flour until a dough ball is formed that can be rolled out with a rolling pin.
Make a dough ball and roll it out with the help of a rolling pin. It’s easier if you sprinkle a bit of flour on the rolling pin as well as on the surface where you will roll out the dough. Use a large round cookie cutter to cut out all the dough. Use a smaller cutter to make a hole in half of the cookies.
Once cut, transfer them to a baking sheet with 2 centimeters of space between them to prevent sticking. Bake for 8-9 minutes.
Once the cookies are cool, spread the side without a hole with blackberry jam and top with the one that has a hole.
Do the same for all the cookies. Once they are all closed, sprinkle them with powdered sugar using a small sieve.
