Cookies with Blackberry Jam

Butter cookies filled with blackberry jam. This recipe is very simple to prepare for any occasion, they look very nice and are easy to make.

  • 1 cup butter
  • 1 1/2 cups sugar
  • 3 cups wheat flour, sifted
  • 1 egg
  • 1 teaspoon almond essence
  • jam, of any flavor for the filling
  • icing sugar

  • Preheat the oven to 180 degrees Celsius. Grease and flour a baking sheet.
  • In an electric mixer, mix the butter, sugar, egg, and almond extract.
  • Mix gradually with the flour until a dough ball is formed that can be rolled out with a rolling pin.
  • Make a dough ball and roll it out with the help of a rolling pin. It’s easier if you sprinkle a bit of flour on the rolling pin as well as on the surface where you will roll out the dough. Use a large round cookie cutter to cut out all the dough. Use a smaller cutter to make a hole in half of the cookies.
  • Once cut, transfer them to a baking sheet with 2 centimeters of space between them to prevent sticking. Bake for 8-9 minutes.
  • Once the cookies are cool, spread the side without a hole with blackberry jam and top with the one that has a hole.
  • Do the same for all the cookies. Once they are all closed, sprinkle them with powdered sugar using a small sieve.
